Ema Datshi | The Heart of Bhutan: Spicy, Cheesy, & Comforting | Well Done Devrat ✨

Creamy, fiery, and deeply comforting, Ema Datshi is the national dish of Bhutan. This simple yet bold stew is a celebration of two main stars: chilies (Ema) and cheese (Datshi).

Unlike most cuisines where chili is used as a seasoning, here it is treated as the primary vegetable. The result is a silky, rich sauce that balances the heat of the green chilies with the velvety smoothness of melted cheese.
It’s a soulful dish that brings warmth to any table.

🗒️ Ingredients:
* Green Chilli - 5-6 (slit lengthwise)
* Garlic - 10-12 pods (smashed and roughly chopped)
* Cheese Slice - 2
* Butter - 1 tbsp
* Oil - 1 tbsp
* Water - as required
* Salt - to taste

🍽️ Method:
Heat 1 tbsp oil and 1 tbsp butter in a pan over medium heat. Let the butter melt and mingle with the oil to prevent it from burning.

Add the smashed and chopped garlic along with the
slit green chilies. Sauté them for a minute until the garlic becomes fragrant and the chilies soften slightly.

Pour in a little water (just enough to partially submerge the chilies) and add salt to taste. Cover the pan and let it simmer for 3-5 minutes until the chilies are tender.
Lower the flame and place the cheese slices over the mixture. Do not stir immediately; cover the pan for another minute to let the cheese melt into the liquid.

Once the cheese is gooey, give it a gentle stir to create a creamy, emulsified sauce. The consistency should be thick enough to coat the chilies.
Turn off the heat and serve immediately while the
cheese is silky and hot.

🗒️ Recipe details:
2 medium sized onions
Chopped coriander
1 tsp chopped green chillies
1 tsp jeera powder
1 tsp coriander powder
1 tsp Aamchur
1 tsp Ajwain
1 tsp red chilli powder
1 tsp garam masala
2 tbsp besan
Salt as per taste

In a bowl add thinly sliced onions, add all the dry spices along with chopped coriander, green chilies and besan Don’t add salt now, it will make onions watery
Roll a thin roti and spread a generous layer of this onion masala on it and cover it with another thin roti
Seal it properly and make a roll of this as shown in the video
Roll it gently and cook it until crispy and flaky by applying some oil/ghee/butter
