VOLUNTEER APPRECIATION EVENT
We had the opportunity to thank our amazing volunteers for all they do every day at Maplewood. Volunteer Coordinator, Alex, went all out with a puzzle themed event, including fabulous decor, fun puzzle games that encouraged teamwork, delicious food and gifts. A big piece of the success of Maplewood's recreation programs is our army of volunteers who brighten our residents days in so many ways. Thank you to all our volunteers!

HEALTHY & DELICIOUS EGGPLANT PARM
Volunteer, Mary Jane, treated residents to her homemade eggplant parmesan today during her "Cooking with Mary Jane" program. Her healthy take on a popular classic Italian dish got rave reviews! For this recipe, there's no breading or frying. The fresh eggplant (which Mary Jane purchases at a local farm stand) is baked in the oven.
Here's the recipe:
1 large eggplant
salt and pepper to taste
3/4 cup store-bought marinara sauce
3/4 cup shredded part-skim mozzarella
1/4 grated cup parmesan
Preheat oven to 400 degrees. Coat baking sheet with cooking spray. Cut off and discard both ends of the eggplant and then cut into thin round slices. Place in single layer on baking sheet, mist the top with the cooking spray and lightly season with salt and pepper. Bake for 20 minutes (until eggplant is soft and golden brown).
Top each slice with about 1 TBSP sauce and 1 heaping TBSP mozzarella. Sprinkle with parmesan. Bake for 5-10 minutes more until cheese is hot and bubbly. ENJOY!
