Besides what the saying says… It’s way easy being GREEN!! Sauté fennel, onion, peas and bell pepper. Purée most of it with pasta water, butter and season with S&P. Toss sauce with pasta and remaining veg 🤩

I’m thinking topping the next batch with sautéed mushrooms and kale✨

Deconstructed Spanakopita ~ Super simple

Sauté favorite greens in oil with cracked black pepper and smashed garlic cloves. Season with salt.

Toast your favorite bread. Season 1/2 Tbsp of oil with herbs, spices and pinch of salt. Spoon over toast.

Spread on something creamy (cheese alternative, feta, nut pate, greek style yogurt, hummus)

Top with hot sautéed greens ✨

Fun & tasty seasonal salad using tender ribs of celery, celery leaves and orange segments. Top with a touch of olive oil and Herbamare herb sea salt or Himalayan salt. Finish it off with a little squeeze of fresh lime juice and gratitude 😉
