I have the BEST sourdough starter!! This levain began with only 52 grams of starter. Overnight it grew into this goey, bubbly, very alive starter that yielded 2 large loaves of Challah bread. Challah dough is enriched with dairy, eggs, and sugar and has a more dense texture than typically found in sourdough bread. It is one of my favorite loaves to bake, both for the beautiful braids and the richness of the dough. And, it's a wonderful bread that makes extraordinary French toast! Last minute, my daughter wanted a cake for Easter. I inwardly scowled as we walked the bakery aisle at the grocery store. Finally, I just couldn't stand the idea of of her buying one of those preservatives laden cakes when she had a baker at her her beck and call. "MOM, I dont want you doing all that work!" Recalling I had leftover cream cheese icing, I suggested a box cake ...easy peasy! Modifying the cake instructions, we ended up with a 3 layer strawberry "tom boy" cake. Layered with a no bake cheesecake filling , topped and garnished with a creamcheese/cheesecake icing....absolutely DELISH! Sooo much better than store bought and only about 45 minutes which included baking time.
