At Finca Santa Mónica in Quindío, Colombia, Jairo Arcila doesn’t just grow Pink Bourbon — he composes with it.
This Rose Tea lot begins with a 72-hour dry anaerobic fermentation alongside dried rose petals, coaxing the varietal’s already-remarkable floral character into something deeper and more deliberate. After pulping, it’s finished as a honey process — dried slowly, carefully, until the cup achieves something that demands your full attention.
The result is perfumed and tea-like, with a clarity and brightness that stops you mid-sip. Long-finishing. Not aggressive, but extremely expressive. The kind of coffee that still has something to say well after the last sip is gone.
