As we wind down for the season, we want to say thank you to the community for all of your support during our first year.
We will temporarily close for the summer in July and August to give our team time to rest and reset. Our last service will be on June 28.
We look forward to reopening in late-August with renewed energy and excitement for the next chapter.

From the beginning, we have believed that the desert holds a story still waiting to be told. Ursa has always explored the Sonoran Desert as the “before”: a landscape of endurance, resilience, and origin.
Today, we are honored to introduce the earliest stage of our new concept. The second half of the story highlighting migration, adaptation, and exchange that became inseparable from the desert itself.
A Sonoran Folklore is a communal dining experience built around family-style dishes, where the past and present meet at the same table.

Ursa is greatly inspired by Chef Aaron Lopez’s Grandfather, Hector Lopez. He was from Superior Arizona by ways of Matape, Sonora.
As a child he would bring home barrel fruit cactus to his mother, who would clean the fruit, Nixtamalize them and then cook them in sugar and chiltepin to make candy.
Ursa’s opening bite follows that tradition by Nixtamalizing the barrel fruit, cooking it in syrup then frying the fruit to create a savory candy shell on the outside. We then pipe a paste made from chiltepin and finish with preserved chiltepin leaves.
We continue the stories that helped shape the legacy of our desert.
