Roast Chicken with Mustard and Grapes ❤️❤️
-This dish is living proof that keeping things straightforward frequently produces excellent results. Roast chicken is given an elegant makeover by lastnightsdinner's use of a pan sauce made from a select few components.
Ingredients:
2 pounds bone-in, skin-on chicken parts
Kosher salt
1 teaspoon whole coriander seeds
1/2 cup finely chopped shallot
1 cup halved seedless red grapes
1 teaspoon brown mustard seeds
1 cup chicken broth
3 tablespoons Dijon mustard
1 tablespoon fresh thyme leaves
Directions:
-Season the chicken pieces aggressively with Kosher salt and refrigerate, uncovered, overnight. Remove from the refrigerator and allow them to come to room temperature.
-Preheat oven to 450 °F.
-Toast the coriander seeds in a dry skillet for a few minutes until fragrant. Remove and crush in a mortar and pestle
-Arrange the chicken in a cast iron skillet or other ovenproof pan. Place in the oven and roast for approximately 25-30 minutes or until the chicken reaches an internal temperature of 165 (remembering that the chicken will continue to cook as it rests).
-Remove the chicken to a platter and tent loosely with foil.
-Pour off all but about 2 teaspoons of the fat from the pan, then add the shallots and grapes. (Note: if you aren’t using particularly fatty pieces of chicken, you may need to add a little olive or vegetable oil instead.) Cook over medium heat until the shallot is softened, stirring occasionally.
-Add the crushed coriander seeds and the mustard seeds to the pan, then add the broth. Whisk in the Dijon until it is incorporated, then cook until the sauce is reduced by half. Taste and adjust salt if necessary.
-Stir in the fresh thyme leaves, move the chicken pieces to individual plates or a serving platter, then spoon the sauce over the chicken pieces.

Champagne Grapes
Blooming from June to September, Champagne grapes are some of the smallest grapes grown and they have a taste that is both sweet and tart. The grapes are crunchy and tender and they are small enough to give to kids without worrying about a choking hazard. Ironically, these grapes are not used for making wine or champagne but they are perfect for snacking on and eating raw.

Moon Drops
Moon Drops stand out from other table grapes due to their unique shape and delicious taste. This type of black grape is seedless and has a surprisingly crunchy texture. Their colour is a deep blue, almost black. Long and tubular, they have a distinctive dimple on one end. This grape makes a great snack. Large in size, they can be stuffed with fillings like whipped cheese or roasted and tossed into a leafy salad to add natural sweetness. This grape was developed for the grape-growing firm The Grapery, and it took 15 years to perfect. Moon Drop grapes are well-known for their unusual shape, snappy texture, grape jelly sweetness, and ability to last longer in the refrigerator than most other grape varieties. You can find this grape between late July and late September.

Muscat Grapes
While not that rare (in fact it is one of the oldest domesticated grape varieties), it is a little unusual to see such a vibrant yellow in a grape.
