Chai vibes meet dessert dreams. Vegan chai crème brûlée is an absolute game changer.
I’m a mom of a toddler and a nutrient-conscious parent. I love recipes that feel like a treat but are packed full of healthy fats, proteins, and fiber. This one checks all the boxes, especially when you swap out the maple syrup for dates.

1 cup raw cashews
1/3 cup canned full-fat coconut milk*
1/3 cup maple syrup
2 tsp vanilla extract
3/4 tsp cinnamon
1/2 tsp ground ginger
1/8 tsp ground nutmeg
1/8 tsp ground cardamom
1/8 tsp ground cloves
1 pinch sea salt (optional)
2 Tbsp organic cane sugar (fine works best but regular will work)
Soak dates and cashews. Blend with coconut milk until smooth and add spices. Chill, top with sugar, and torch!
✅ I swap the maple syrup for soaked dates.
✅ I add allspice and more of the other spices the recipe calls for. I like it super chai-y.
👎 I tried brown sugar sprinkled on top this time but it didn’t work. It got too watery and didn’t really crust well. It tasted good though!
✅ in the past I used raw sugar - only one tsp per ramekin to get a thin crust but keep it lower in overall added sugar! Worked really well!
🫤 my pictures didn’t turn out as beautifully as because I used brown sugar but I promise if you make them with regular sugar it will work AND give you a gorgeous crust!
