This is how to make a better frittata:

☝🏼 cook on med-low heat and finish in the oven

✌🏼 cover the pan after removing from the oven/before slicing… the steam will help lift it out of the pan with ease.

And how about a recipe for one of my favorite combos, Ham & Leek?

• about a cup of sliced leeks
• about a cup of chopped ham or Canadian bacon
• 8 eggs
• couple tablespoons of butter
• salt & pepper
• fresh parsley, if you’d like

Frittatas are a staple in the prep-ahead breakfasts department. Leftover meat + veggies are always a yes, but so is making a dedicated recipe (like this one) too.

POT STICKER MEATBALLS: Unlike many other recipes under the same title, mine leverages the classic technique of chopping prawns into pork. The texture of the meatball resembles the texture of the filling for a traditional pot sticker. This makes it juicy and with a light mouthfeel instead of a dry or dense meatball.
