Tuscan Chicken Tortellini Soup✨ The ultimate sweater weather soup for a cozy night in! Packed with vegetables, protein and comforting Tuscan flavors like sun dried tomatoes, lacinato kale, cannellini beans and thyme. The tortellini is the perfect comforting add in the whole family will love and the leftovers are even better!

Here’s what you need:

Chicken
1 tbsp olive oil 
1 lb chicken breast
1 tsp each paprika, garlic and onion powder 
Salt and pepper

Soup
1 medium yellow onion, finely diced
2 carrots, peeled and finely diced
4 cloves garlic, minced
3 tbsp tomato paste
1 tsp Italian seasoning
1 tsp dried thyme
2/3 cup sun dried tomatoes, chopped
1 can cannellini beans
4 cups chicken broth
1 cup whole milk
1/4 to 1/2 cup heavy cream, depending on desired creaminess
1/2 cup shredded Parmesan cheese
2-3 cups lacinato kale, chopped
10 oz cheese tortellini
Optional: 1/4 tsp red pepper flakes

Season the chicken with olive oil, paprika, garlic and onion powder and a generous pinch of salt and pepper.

Heat a heavy bottomed pot with olive oil over medium high heat. Add the chicken and cook for 6-8 minutes on each side until cooked through. Remove and set aside to cool then shred.

Reduce heat to medium. Add a bit more olive oil, along with the onion and carrots and sauté until tender. Add the garlic and stir another 30 seconds.  Stir in the tomato paste, Italian seasoning, thyme and sun dried tomatoes, scraping up any burnt bits on the bottom. Add in the red pepper flakes here if you like a spicier soup.

Stir in the chicken broth, beans and milk and bring to a boil then reduce to a simmer, uncovered, for 10-15 minutes until liquid is slightly reduced. 

Stir in the cream and Parmesan and bring back to a low simmer. Add the tortellini and kale. Cook until the tortellini is just al dente, per package instructions. Finally stir in the shredded chicken. Taste and add salt and pepper as needed. Serve topped with additional parm and red pepper flakes and enjoy!
