It was a TIGHT turnaround, but we got it done! My client contacted me late Wednesday night and today we booked the first part of their trip which starts in THREE days!!! Their family of 15 will enjoy 4 nights at the Boardwalk Inn at Disney World in Florida with a 4 day park pass. They are taking advantage of the Disney Dining Package which is a huge help with budgeting for food since that can add up so quickly! Right now, the kids ages 3-9 get their package for FREE!

Tomorrow we finish up the other half of their trip and then it's time to say "Bon Voyage!" I am so happy I was able to help them out!

My husband and I were watching Clarkson's Farm last night which is one of our favorite shows, and he took a trip using the Channel Tunnel (sometimes known as the "Chunnel"). I have heard of this before but have never given it a second thought. I am now fascinated with all things Chunnel - especially the train that carries cars through the tunnel!

We tried a new recipe for dinner tonight and when I found out the meaning of the name, I just had to share! My husband made chicken and pork saltimbocca (the chicken is pictures) and it was absolutely amazing. We paired it with homemade mushroom risotto (made in the instant pot!!) and grilled asparagus.

We looked up what saltimbocca meant and the literal Italian translation is "Jump in my mouth". It was so delicious I couldn't think of a more perfect name!!

I highly recommend giving this a try at a local restaurant, at home, or even better...... in Italy!!
