Causa de aguacate y tomate - a cold potato dish made with mashed potato, lime juice, aji amarillo, and olive oil. Our version is layered with avocado and tomato - but can be filled with other ingredients such as a traditional tuna fish salad or our tuna tartare version! This dish predates Incan civilization and is linked to its quechuan name “kausay”, meaning “life” or “sustenance”. In more recent history, during the Pacific War, women prepared the dish to feed the troops and called for support of “la causa” - the cause!
