Craving mexican food but want to keep it healthy? Try out this taco salad. So simple and so delicious!
This will give you 3-4 salads:
1 pound lean ground beef (96/4 is best, if you can find it, but 93/7 is ok, if not)
White onion
Tomato
Cilantro (can leave this out if you don't care for it 😘)
Lettuce (iceberg or romaine)
Can of pinto or black Beans (only if you want some carbs)
Salsa made with only veggies (Herdez medium salsa casera is delicious!)
Brown the meat on a pan with salt and pepper to taste. You can also add some garlic powder, if you like 😊.
Rinse and chop all of the rest of the ingredients.
Heat the beans in a small sauce pan, if using them.
In a large salad bowl, add meat and beans, then top with a handful each of: onions, cilantro, tomato. Then fill the bowl with as much lettuce as you'd like and top with salsa to taste.
Stir and enjoy!
Save the remaining ingredients for a few more salads. Just reheat the meat and beans in the bowl and then add other ingredients on top and voila!!

Saturday morning sunrise hikes are an amazing way to start the weekend! As many of you may or may not know, hiking is a regular part of my fitness regimen, by my early morning Saturday hikes with are my favorite ones of the week. The cool air, watching the sun rise over the mountains, getting my heart pumping, being out in nature... truly invigorating!
