Caribbean Salad with Salmon

I recently tried a new entree at a popular restaurant and decided to make my own version of the meal.
I present to you the Salmon veggie bowl!
Salmon on top of a bed of different veggies (oven roasted cauliflower, asparagus, squash, zucchini, tomatoes, seasoned avocado), sweet potatoes, and rice! Topped with a homemade lemon mint yogurt sauce! 😋😋😋
I think we have ourselves a winner!
