The Co-Op Farmers Market is open every Monday, Wednesday, and Friday from Noon-6pm from Mid July until Thanksgiving Eve. We are located at 900 Barring Avenue in Scranton, just off Albright Avenue behind the famous Glider Diner. Our organization is supported and operated by the Women’s Auxiliary of Scranton.

🍂 One-Pan Roasted Veggie Sheet Dinner 🥕🥦

Easy, cozy, and full of seasonal flavors—perfect for a weeknight fall dinner!

Ingredients:
1 small butternut squash, cubed
2 carrots, sliced
1 red bell pepper, chopped
1 zucchini, sliced
1 red onion, chopped
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried thyme or rosemary
Salt & pepper to taste

Optional: cooked sausage or chicken for protein

Instructions:
Preheat oven to 400°F.
Toss all veggies with olive oil, garlic powder, thyme, salt, and pepper.
Spread evenly on a large baking sheet.
Roast for 25–30 minutes, tossing halfway, until veggies are tender and lightly caramelized.
Serve as a hearty vegetarian dinner, or add your favorite protein for a complete meal.

🎃 Stuffed Acorn Squash 🍂

Cozy, colorful, and full of autumn flavor—perfect for a hearty fall meal!

Ingredients:
2 acorn squashes, halved and seeds removed
1 cup cooked quinoa or rice
1/2 cup sautéed mushrooms
1/4 cup chopped onions
1/4 cup dried cranberries or raisins
1/4 cup nuts (pecans or walnuts), chopped
1 tsp cinnamon
Salt & pepper to taste
Olive oil

Instructions:
Preheat oven to 375°F.
Brush acorn squash halves with olive oil, season with salt and pepper, and roast cut-side down for 25–30 minutes.
In a skillet, sauté onions and mushrooms until soft. Mix with quinoa, cranberries, nuts, cinnamon, and seasoning.
Fill each squash half with the mixture.
Return to oven for 10–15 minutes until heated through.

Serve warm and enjoy the flavors of fall! 🍁
