Tips for a Juicy Turkey (No Stuffing Inside)
• Preheat your oven to 325°F.
• After seasoning, cover the turkey with a towel dampened with vegetable oil (avoid olive oil).
• Check the turkey every 30 minutes. When the towel dries out, pour chicken stock over it to keep it moist. Continue adding stock until you have enough drippings to baste the turkey.
• Remove the towel during the last 45 minutes to allow the skin to brown beautifully.
• For an 18 lb turkey, roasting at 325°F will take about 4 to 4.5 hours (roughly 13–15 minutes per pound).
• Always check that the internal temperature reaches 165°F in the thickest part of the thigh.
