Everything starts out as an idea... Sprinkle some action and consistency and watch it grow.

This "More than Avocado πŸ₯‘ Toast" has become a household favorite.

Ingredients

β€’1 Slice Sourdough
β€’ Β½ Tbsp Pesto Mayo
β€’ 2 Tbsp Homemade Guacamole
β€’ 6 Slices English Cucumber πŸ₯’
β€’ 2 Large Slices Heirloom Tomato πŸ…
β€’ Handful of Arugula 🌱
β€’ Pickled Red πŸ§… Onions
β€’ Salt & Pepper (to taste)

Instructions

Place bread in toaster and get slicing up your other ingredients. When you toast pops, place it on a plate and top with pesto, guacamole, cucumber, tomato, arugula, pickled red onion and salt and pepper.

This recipe makes one.

Roasted Street Corn Salad With Guac

Ingredients:

6 ears fresh corn, husks & silk removed

2 ripe avocados, pitted

3 Tbsp extra virgin olive oil

juice of 2 large limes

2 tsp pure maple syrup

1-1/2 tsp chili powder

1 tsp smoked paprika

1 jalapeno, seeded and chopped

sea salt & black pepper

2 Tbsp fresh chives, chopped

1 cup fresh basil leaves, chopped

1/2 cup fresh cilantro, chopped

tortilla chips, for serving

Directions:

1.) Heat a grill or broiler to high. Then slice the kernels from 3 ears of corn off and add to a large bowl. Grill or broil the remaining 3 ears of corn until lightly charred all over. Remove and let cool until you can handle. Slice the kernels off those and add to the bowl as well.

2.) Add the avocado, 1 Tbsp of oil, half of the lime juice and a pinch of salt to a food processor. Puree until completely smooth. Add 2 Tbsp of the puree to the bowl with the corn. Set the remainder aside.

3.) To the bowl with the corn, add the remaining oil, lime juice, syrup, spices, jalapeno and chives. Season with salt and pepper to taste. Stir in the basil and cilantro.

4.) Spoon the remaining avocado puree into the bottom of a serving bowl and top with the corn salad. Serve the salad as a side or with chips for scooping.

️Eating more whole and homemade foods means there is more cooking, baking and mess but it's worth it for the health benefits! πŸ‘‡

1️⃣ Meal Prep Once Or Twice A Week
I talk about this a lot, for good reasons. One of them is less messes to clean up throughout the week! With meal prep, you make one bigger mess, but at least you clean it all at once. It’s better than the constant unloading and reloading the dishwasher, cleaning counters and washing dishes every single night. Meal prep makes those nightly messes much more manageable. πŸ‘

2️⃣ Clean While You Cook
There are little pockets of time while cooking like waiting for water to boil, or veggies to cook or something to bake. Instead of scrolling on your phone or something else, use that time to clean up! Have a hot soapy sink of water to start soaking things right away. Rinse out or wash dishes, load the dishwasher, wipe up counters, put ingredients that you’re done with away. By the time food is ready, your kitchen is clean.

3️⃣ Do The Dishes Before Bed
It can be easy to leave behind a couple dishes that we just β€˜didn’t get to’ each night. Those can really start to add up over the week. Give yourself a pep talk and just get it done before bed! Good news it should be a whole lot easier to do if you already were cleaning while you were cooking. πŸ˜‰ It’s much more peaceful to go bed with a clean kitchen AND wake up to one in the morning. Sometimes nightly clean kitchen just isn't possible with roommates, kids, and spouses. Being flexible and changing the cleanup to the morning could be the way to go in this case!
