Join us for our annual Agricultural Fair at Genesee Country Village & Museum – back for its 49th year! Celebrate the bountiful Western NY harvest as the Museum shines in its finest fall colors! Enjoy livestock and cooking demonstrations, entertainment for the whole family, and browsing for unique finds at the market in the tradition of the country fairs of days gone by.

Beithir’s Accord – Stronghold Meadery

Crafted with New York Wildflower Honey & Whole Cherries (pits included)

Beithir’s Accord is a mead forged in boldness, striking a pact between fire and finesse. Built upon wildflower honey and whole cherries — pits included — it delivers a depth of character that elevates this melomel beyond fruit-forward sweetness into something darker, more complex, and undeniably commanding.

The inclusion of cherry pits lends a faint almond-like bitterness, echoing marzipan and roasted stonefruit kernels, weaving seamlessly into the lush tapestry of honey and fruit. On the nose, aromas of black cherry preserve, wildflower nectar, and subtle spice intermingle with whispers of cocoa husk and almond skin.

The palate opens with rich, ripe cherries balanced by 5.5% residual sugar, creating a supple, velvety entry. Mid-palate, layers unfold: honey’s golden warmth, the faintly nutty echo of cherry pits, and a balancing acidity that keeps the sweetness in check. The interplay of fruit, honey, and subtle bitterness gives the mead remarkable structure and sophistication, avoiding excess while embracing decadence.

The finish is long and powerful, carrying notes of dark cherry compote, honeycomb, and a whisper of almond bitterness, like the final exhale of smoke after a dragon’s breath.

Pair Beithir’s Accord with rich dark chocolate, duck breast with cherry glaze, or an aged blue cheese to amplify its interplay of sweet, tart, and savory. Or enjoy it solo — a contemplative pour as commanding as the mythical serpent it’s named after.

This is not just mead with cherries — it is cherries in their entirety, honoring every part of the fruit, just as legends honor every part of the Beithir!
