I started a new RD job last week and let's just say getting back into a routine was ROUGH after being at home for 5 months!! Skipping out on breakfast gets me ALL kinds of hangry!!!

SOO I made a huge batch of my favorite easy, go-to grab and go breakfast. Super hero muffins.

I'm not posting the recipe because you can Google it yourself. But my variations this time was sour cream blueberry. The original recipe calls for 1 cup grated carrots and 1 cup grated zucchini. Make sure whatever wet ingredients like grated apples, pumpkin puree, blueberries blackberries and whatever else you can come up with equals 2 cups!!!

They're gluten free, refined sugar free and a giant batch lasts in freezer for 2-3 months. Microwave for 30-45 seconds and yes a slab of butter on top is ABSOLUTELY NECESSARY!!!
