Looking for a healthier muffin recipe? Try this one packed with healthy fats, protein, fruit, and various textures feature the Cricket Flours Black Soldier Fly Larvae.
Directions
1. Line a muffin tin with paper or reusable liners. Preheat your oven to 375 degrees Fahrenheit. Cut your fresh avocado into small chunks, then in a medium mixing bowl or the bowl of a stand mixer, beat the avocado into a smooth paste, some small chunks may remain. Add eggs, coconut sugar, and oil, and beat until combined. Mix in the crushed pineapple with its juice and the 1/8 cup of orange juice.
2. In a second bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, Valencia orange peel, and cardamom. Mix well into the wet ingredients until all of the flour is moistened and well combined. Fold in the Cricket Flours Black Soldier Fly Larvae and sliced almonds.
3. Spoon or scoop the batter evenly between the prepared muffin tin, and bake for 20-25 minutes or until a toothpick inserted into the middle comes out clean. Serve warm and enjoy!
