Working in the food industry, I became acutely aware of the enormity of waste that occurs in restaurants (and elsewhere). Every year, 40 million tons of food is wasted in the US alone. Meanwhile, nearly 1 in 10 American families are food insecure or hungry; they do not know when or where their next meal will come from.
