This beauty is a Yoshihiro hammered Kiritsuke-style Gyuto from Sakai, Japan 🇯🇵 — one of the historic knife-making regions in the world.

Highlights:

• Maker: Yoshihiro Cutlery
• Style: Kiritsuke / K-tip chef knife
• Steel: VG-10 stainless core
• Hardness: ~60–61 HRC
• Finish: Tsuchime (hammered)
• Handle: Western pakkawood

VG-10 takes a very crisp edge and holds it well — which is why a lot of professional kitchens use knives like this.

As a working chef and knife sharpener, I love seeing quality Japanese blades come across the bench.
