Baked Fried Rice

Ingredients:
3 cups cold cooked rice
2 tablespoons vegetable oil
1 cup diced onion
2 cloves garlic, minced
1 cup diced carrot
1 cup frozen peas
2 cups cooked chicken, diced (or any protein of choice)
3 large eggs, lightly beaten
1/4 cup soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
2 green onions, sliced
Salt and pepper to taste
Instructions:
Preheat your oven to 350°F (175°C).
Heat vegetable oil in a large skillet over medium heat. Add the onion and cook until soft, about 3 minutes. Add garlic and cook for another minute.
Stir in the carrot and cook until tender, about 5 minutes. Add the peas and cook for another 2 minutes.
Push the vegetables to one side of the skillet. Add the diced chicken to the empty side and cook until heated through.
Pour the beaten eggs into the empty side of the skillet and scramble until cooked.
Add the cold rice to the skillet, breaking up any clumps. Stir in the soy sauce, oyster sauce (if using), and sesame oil. Mix well.
Season with salt and pepper to taste.
Transfer the mixture to a baking dish and spread evenly. Bake in the preheated oven for 20-25 minutes or until heated through.
Garnish with sliced green onions before serving.

Baked Fish with Lemon Cream Sauce

Ingredients:
4 white fish fillets (like cod or tilapia)
Salt and pepper, to taste
2 tbsp butter
1 cup heavy cream
2 tbsp lemon juice
1 tsp lemon zest
2 garlic cloves, minced
1 tbsp fresh dill, chopped (optional)
Lemon slices, for garnish
Instructions:
Preheat oven to 400°F (200°C).
Season fish fillets with salt and pepper. Place in a baking dish.
In a saucepan, melt butter over medium heat. Add garlic and sauté until fragrant.
Stir in cream, lemon juice, and lemon zest. Bring to a simmer and cook for 3-4 minutes until slightly thickened.
Pour the sauce over the fish fillets.
Bake for 15-20 minutes until fish is cooked through.
Garnish with fresh dill and lemon slices. Serve hot.
