Food from the earth is the greatest gift we have.
Plants, legumes, nuts and seeds have some nice side effects too of bettering the soil, the air we breathe, the water we drink and provide an entire biome and home for microorganisms. Most of the wisest and most spiritually-oriented and connected people will also tell you a simplified plant-based diet strengthens their spiritual connection; I can vouch for this personally.
Plants require way less resourcing compared to processed foods and animal/factory farming and they leave no trace behind... not even close to the case with animal farming and packaged goods.
To date, I have not met a person or patient that developed a health concern from eating too many vegetables. I can’t say that about dairy, meat, salt, processed foods, coffee and sugar.
Humans have made something so simple, incredibly complicated and a lot of that is to confuse you, make you buy things you don’t need and frankly make you ill. Nature has no interest in your money; it has interest in your consciousness.
Man seems to think one day it will conquer nature somehow through science and magic pills, but the truth is it will never be able to touch the power of nature. It could only assist in making it more powerful and accessible to more people.
Consciousness starts with what you consume in all respects and if you think your food has nothing to do with anxiety, depression, insomnia, energy, fertility, immunity and disease/pain, then it is time to get back to basics. Not new basics, really old basics.

There are so many ways to eat and we all have different bodies, conditions, sensitivities/allergies, local environmental concerns, belief systems, heritages and needs/goals related to our health.
However, for most, nutrient-dense, as fresh as possible, with the least amount of pesticides should be the goal. Kale has been my go to for the last 20 years, however in recent years it can be one of the most laden with pesticides, so organic or your own back yard is best.
I like to pack it in early in the day as it reduces my cravings for sugar and other processed foods. It is still growing in my yard as we hit freeze level temps and I add fresh herbs like rosemary, thyme and oregano that I also grow and it feels like I just dosed myself with the easiest most accessible medicine.
Food is the first place you should start with your health. Step up the nutrient content and freshness and you will naturally crowd out the crap. In winter our output should be less than other seasons, so make every bite count.
