This has been my go-to summer salad this year: shredded Kale, chopped red and yellow bell pepper, red onion, cucumber, tomatoes, topped with goat cheese and lemon salad dressing πŸ˜šπŸ‘ŒπŸ» I could seriously eat this every day!

Here’s the salad dressing recipe:
3/4 cup olive oil
1/2 tsp lemon zest
1 tsp pink Himalayan salt
Fresh cracked pepper to taste
1/2 tsp minced garlic
4 TBSP fresh squeezed lemon juice

Shake all ingredients together in a mason jar and enjoy! Store in the refrigerator.
