It's Pasta Night.
PESTO PASTA WITH SAN JOAQUIN GOLD
1lb spaghetti
Pesto:
* 2 cups packed fresh basil
* ½ cup extra-virgin olive oil
* ¼ cup toasted pine nuts
* 3 cloves garlic, peeled
* ½ cup freshly grated San Joaquin Gold
* fresh lemon juice to taste
* kosher salt and freshly ground black pepper to taste
Combine basil leaves, oil, pine nuts, and garlic in a food processor or blender; San Jpurée until smooth.
Stir in San Joaquin Gold; season to taste with lemon juice, salt, and pepper.
Boil pasta according to package instructions. Just before pasta reaches al dente remove 1/2 cup of pasta water.
Drain pasta and place noodles back into pot. Spoon in 2-3 heaping spoon full of pesto followed by 2 tablespoons of pasta water. Using tongs stir pesto into pasta, creating a nice creamy sauce coating the pasta.
Using tongs, spoon pasta into bowls and garnish with more San Joaquin Gold.
