Local farmer Nissa Inselman-Field grows herbs and vegetables behind her home in Otsego, Minnesota, and spends her days delivering them to restaurants throughout the Twin Cities, including ours.
Chef de Cuisine Alan first met Nissa almost 10 years ago and has worked with her produce at Demi since 2023. Beyond the quality of what she grows, it’s her passion and knowledge that make her such a valued partner. From rare herbs to authentic varieties, Nissa knows the story behind every seed she plants and brings incredible depth of flavor to the ingredients we use throughout the menu, including the radish featured on our current pea tart canapé.
We’re grateful to feature Nissa’s produce whenever we can. Her commitment to thoughtful, sustainable farming brings something truly special to the experience at Demi!

We're fortunate to call Minnesota home, where producers like Shepherd's Way Farms make it possible to create dishes rooted in both place and season. Their sheep's milk is currently at the heart of our pre-dessert course, highlighting the partnership between exceptional ingredients and the craftsmanship behind every course at Demi.
