Seedless Raspberry jam filled Vanilla cake with Vanilla Cheesecake flavored buttercream frosting, topped with Vanilla Cheesecake flavored fondant.

Covering cakes in fondant is the most nerve-wracking task for me. I was very pleased that I finally got the temperature, humidity, and recipe conditions just right in order to prep a few perfect batches of fondant. It's such a game changer when the consistency is just right. I was ecstatic when I was able to cover the cakes in fondant and not have any tears, placing mishaps or other potential issues.

Each flower petal and leaf was hand sculpted out of fondant and carefully placed however the stamens and stems were not edible.

Thank you Tracy Whitmore for surprising me with a drop in and helping me wrap the stamens to the floral wire. Being out with a migraine for 2.5 days really cut into my prep time and I don't think I would have been able to finish this project without your help.

I threw this together for a party that was accidentally thrown on Harry Potter's birthday...once I realized the date, not baking a cake wasn't an option.

Then I turned it into a surprise birthday cake for Madison Sayes by crossing off Harry's name and writing Madison's underneath.

Unfortunately my phone went missing, so I'm grateful to my friends for snapping a pic. I can't remember who I stole this from, but thank you.

Chocolate Cake with Vanilla flavored Buttercream frosting

Last year Gonzalo Barragán and I started a tradition of recreating cakes from films for his birthday with our Tilted Sleeping Beauty cake.

This year he chose a Studio Ghibli cake from "The Cat Returns." His family helped out with the fondant fish 🐟
