Today Erin Murray is sharing a delicious recipe that's healthy and good for your skin!
One of my favorite recipes full of skin-loving ingredients is this Five Color Kale Ribbon Salad. It contains ample beneficial fibers that fuel the gut microbiome, as well as Vitamin C from the cherries, healthy fats from the nuts and seeds, and protein-building amino acids from the quinoa. This salad can be added to any meal as a side dish, or serve as the main meal itself. It's also perfect for meal prep if you have a busy week ahead!
FIVE-COLOR KALE RIBBON SALAD
Serves: 4 Time: 20 minutes
Ingredients
4 cups super-finely chopped kale (it should be almost shaved off the leaf, and resemble ribbons)
1 cup diced heirloom tomato
1/2 cup diced radish
1/2 cup diced sweet onion
1 cup diced and pitted cherries
1/4 cup pumpkin seeds
3/4 cup chopped walnuts
2 cups red quinoa, cooked and cooled
4 tbsp good olive oil
2 tbsp lemon juice
2 tbsp no sugar added orange juice
Pink Himalayan Sea Salt, to taste
Directions
Combine all ingredients in a bowl. Stir, and enjoy!
*This salad keeps extremely well in the fridge. It can be served immediately or stored in an airtight container in the refrigerator for up to three days.
