Banana ice cream with peanut butter
Ingredients
2 ripe and frozen bananas
2 tablespoons of peanut butter
1/2 glass of coconut milk
1 scoop of whey (optional)
Preparation mode
In a blender, add all ingredients and blend until smooth.
Transfer to a container, cover and place in the freezer for at least 4 hours.
Now just serve.

Avocado Salad with Corn
Ingredients
½ red onion, cut in half moon shape
2 medium ripe tomatoes, diced
½ cup of boiled corn
1 small avocado cut into cubes
half lemon juice
salt to taste
Olive oil to taste
plain lettuce to taste
Preparation mode
Gather all the ingredients;
Place the onions, tomatoes, corn and avocado in a bowl;
Add the lemon juice, especially over the avocado pieces so that they do not oxidize (darken); then add salt, olive oil and mix;
Line a platter with lettuce leaves, place the seasoned salad on them and serve next.
Feel free to add your favorite ingredients and seasonings to the salad. In addition, we suggest that it be served with nachos or tortillas.

Chia flan
Ingredients
1 cup of coconut milk
4 tablespoons of chia seeds
2 tablespoons of honey (or any sweetener to taste)
Fruits to taste
Preparation mode
Gather all the ingredients; in a container, add coconut milk, chia, honey and mix well; take it to the fridge for at least 1 hour to gain consistency; now just assemble: layer the pudding interspersing with fruit in a glass pot; take it to the fridge and leave it for another 4 hours, or overnight; now just serve.
Serve with granola, it is delicious and brings a very good crunch. You can add fruit jellies in the layers, of different flavors, creating different versions.

Healthy muffin with strawberry jam
Ingredients
2 eggs
1/2 cup skimmed milk
1/4 cup coconut oil or melted butter
2 cups of oat flour
1/4 cup demerara sugar or sweetener
1 teaspoon of baking powder
Strawberry jam to taste
preparation mode
In a bowl, mix all the ingredients (except the jam).
When it becomes homogeneous, put parts of the dough in muffin molds.
Bake in oven at 200°C for 20 minutes.
Put the strawberry jam on top of the muffins and it's ready.
