Homemade cinnamon apple sauce:

8 apples of your choice (we used snapdragons)
1 tbsp. Of sugar
2 tbsp. Of cinnamon
1 1/2 cups water

Chop apples and core them. We leave skins in for more flavor. Mix all ingredients in big pot and bring to a boil. The smaller the apple pieces, the faster it will boil. It took us a good 45 minutes until they were softened. Use masher or immersion blender to blend. A great healthy dessert!

Turkey kielbasa with veggies

1 pound of red potatoes
2 - 13 oz packages of Turkey kielbasa
1/2 cup Of olive oil
1 stick of butter
4 cloves of garlic, cut coarsely
2 tbsp. Parsley
1 red onion cut coarsely
2 red peppers, cut in rings
Himalayan or sea salt
1/4 tsp. Thyme
1/2 tsp. Onion powder
1/2 tsp.Garlic powder
Pepper to taste
1 tbsp. Paprika

Preheat oven to 375°.

1. Cut potatoes 1/4" thick
Cut kielbasa in 1/2" thick

2. In a large bowl, add kielbasa, potatoes, onions, garlic, sprinkle with salt and pepper to taste. Also add garlic powder and onion powder with olive oil. Mix well and spread onto baking sheet. Top with parsley, paprika, and thyme.

Bake for 40 minutes or until potatoes are soft..

We served ours with French style green beans.

Mama's American Goulash

A nice and easy meal for you busy ones!

1.25 lbs. Ground beef
1-1.5 cups chopped yellow
1 green pepper
7 cloves of garlic
1 (28 oz) can diced tomatoes
1 cup of organic beef broth (or regular if you prefer)
1/2 tsp. Salt
1/2 tsp. Pepper
1 tsp. Italian Seasoning
1 tea spoon of cane sugar
1 tbsp. Worcester Sauce
1 bay leaf
1 1/4 cups elbow macaroni
1 1/2 cups of cheddar cheese
Parsley to garnish

Directions:

In a big pot, over medium high heat, cook brown beef, onion, green pepper until beef is no longer pink. Drain off grease.

Add garlic and cook about 30 seconds. Add diced tomatoes, 15 oz tomato sauce, beef broth, salt, pepper, Italian seasoning, sugar, Worcestershire Sauce and bay leaf. Stir to combine together.

Bring to a low boil and add elbow macaroni. Stir to combine together. Cover and simmer for 15 minutes or until pasta is cooked. Remove from heat and discard bay leaf. Stir in cheese until melted.

Garnish with parsley.
