Salting your pasta water is not optional. 🌿

I said what I said.

We just dropped a blog post all about salt over on Real Food Real Chaos — and it felt very appropriate to follow it up with this video I've been sitting on for a while. Consider this part two.

Your pasta water should taste like the ocean — and I mean actually salty, not "I shook the shaker twice and felt good about it." Here's why it matters:

It's the only chance you get to season the pasta from the inside out. It helps with starch gelation so your noodles stay al dente instead of turning into a gluey mess. And it reduces stickiness so your pasta actually behaves itself.

Oh and before you drain it — save a little of that starchy salty pasta water. That liquid gold can loosen a thick sauce or bring the whole dish together in a way nothing else can.
