🍠 Crispy Sweet Potato Nacho Boats 🧀🌶️
The perfect fusion of comfort food and healthy indulgence!

📌 Ingredients:

2 large sweet potatoes (long and thick)

1/2 cup black beans (cooked or canned, drained)

1/2 cup corn kernels (fresh or frozen)

1/4 cup diced red onion

1/4 cup diced tomatoes

1/2 tsp smoked paprika

1/2 tsp cumin

Salt & pepper to taste

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup sour cream or Greek yogurt

1 ripe avocado (diced)

Fresh cilantro (for garnish)

Olive oil

🧑‍🍳 Instructions:

Prep the Sweet Potatoes:
Preheat oven to 400°F (200°C). Wash and slice sweet potatoes lengthwise into halves. Scoop out a shallow “boat” in each half with a spoon (don’t go too deep). Lightly brush with olive oil and season with salt and pepper.

Bake:
Place sweet potato halves on a baking sheet, skin side down. Bake for 25–30 minutes or until soft but still holding shape.

Make the Filling:
In a bowl, mix black beans, corn, onion, tomatoes, smoked paprika, cumin, and a dash of salt and pepper.

Assemble & Melt:
Remove sweet potatoes from the oven. Fill each boat with the bean mixture and sprinkle cheese on top. Return to the oven for another 5–7 minutes, until the cheese is melted and bubbly.

Top It Off:
Remove from oven, drizzle with sour cream or Greek yogurt, add diced avocado, and sprinkle chopped cilantro on top.

Spicy Coconut Lime Chicken 🌶️🥥🍋
Ingredients:

2 boneless, skinless chicken breasts
1 can (13.5 oz) coconut milk
2 tbsp lime juice (freshly squeezed)
1 tbsp lime zest
2 garlic cloves (minced)
1 tsp ginger (grated)
1 tbsp soy sauce
1 tsp honey
1 tsp red chili flakes (adjust to taste)
1 tbsp olive oil
Fresh cilantro for garnish
Instructions:
1️⃣ In a bowl, mix coconut milk, lime juice, zest, garlic, ginger, soy sauce, honey, and chili flakes.
2️⃣ Place chicken breasts in the marinade and let sit for at least 30 minutes (or overnight for deeper flavor).
3️⃣ Heat olive oil in a pan over medium heat and cook chicken for about 6-7 minutes on each side until golden brown and fully cooked.
4️⃣ Pour the remaining marinade into the pan and let it simmer for 5 minutes.
5️⃣ Garnish with fresh cilantro and serve with rice or steamed veggies!
