My first time making Porkstrami. Made a standard pastrami brine and put a pork butt in it for a week. Cooked it overnight on my pellet grill and let it rest for a few hours this morning. Tastes like super tender corned beef. It’s different than any other pork butt I’ve ever cooked. It’s super soft, but not mushy. It’s more moist and juicy than any pork pot I’ve ever had.
