Cosmic Coyote

Hey friends,

We are feeling equal parts grateful and sad today, as we share the news that we will be winding down operations at Cosmic Coyote after this weekend’s service.

When we brought home our first trailer (who remembers our little hot dog wagon?), we set off on a journey to fulfill many personal & professional dreams. After moving to the big trailer, we achieved many, if not all of our goals, and take an immense amount of pride in the food we’ve shared over the last three years. Most of all, we’ll remember the support we received from our community - thank you for allowing us to be a part of your meals, and your special moments. Thanks to Cellar West for providing us an amazing space and community. We wouldn't have been what we were without their support. And a thank you to our local suppliers, too, for providing us great product like meat, pretzels, bread and beer to build our recipes with.

Most of you have heard or read how challenging it is to run a food and beverage business in 2025. That is true. But while operating our little food truck has never been easy, we’re really all just changing course personally in a lot of ways, which doesn’t provide us a clear picture on how to take Cosmic Coyote forward in a way that does justice to our customers, ourselves, and the overall story of our small business. We say goodbye with glassy eyes but a lot of optimism for what's next.

And what’s immediately next at the truck is we will be open our normal hours this week at Cellar West. 4-8pm Wednesday through Friday, noon to 8pm Saturday, & noon-7pm Sunday. So come on out for one last Butter Burger, Taos Dog, or Pretzel with that addictive beer cheese made from the best beer in town. We’ll be putting just as much love into the food the next few days as we always have, and we’d love to say thanks in person.

Cellar West Brewery has a new food partner at Lafayette which they’ll be announcing in the coming week.

Not goodbye, just see ya outside the truck, hopefully for a pint.

Good morning everyone! Cosmic will be opening at 1pm today! Come hang out and root for your favorite college football team! We have some of the best game day snacks around the area. 1pm-8pm at Cellar West Brewery!

Today we bring to you a brand new IPA called Glass Camels!

Glass Camels is a really cool India Pale Ale. I started with some of our favorite Malteurop malts: Pilsen, Steamed Crystal 40L, & Wheat Malt. Then we lean into criminally underrated, American classic hop varietal Crystal. 2lb per barrel of Crystal does the heavy lifting in the kettle and dry hop, backed by a big dose of Citra. Lastly, Elani Cryo is woven in adding some new-age appeal. Just a fun mix of old-school & new-school in this one; big notes of lemon zest, guava, white peach, and grapefruit.

Glass Camels (6.4% ABV.) is on draught & in cans to-go when we open at noon today. Cosmic Coyote will be slinging great eats all day, and we also have DJ Akilimanjaro in the house spinning some vinyl at 5pm.
