May means Kalamazoo Vegan Chef Challenge! Our kitchen has outdone themselves once again with fantastic new options, and twists on past favorites!
Begin with your choice of either Grilled Asparagus or Scallops of Palm. Seasonal, local grilled asparagus is layered with black bean, corn, pico de gallo, tofu crema, tajin, and fresh lime.
A favorite from last year’s Vegan Challenge is back in a new setting.
Scallops of Palm is served with arugula, aji amarillo, panca sweet potato, and corn salsa.
For the second course, choose between a Mushroom Taco or the Peach Skewer. Featuring local Sprout It mushrooms, our Mushroom Taco has arugula, tofu crema, and red chimichurri.
Our Skewer features grilled peach, onion, pepper, served with cilantro rice, tofu crema, Peruvian pepper glaze, and fresh flour tortillas from our friends in Fennville at Las Brazas.
To finish, enjoy a raspberry mango terrine served with raspberry ghost pepper sorbet, mango sorbet, vegan cream, and coconut. Fresh, sweet, and just a touch of heat.
All courses have an optional beverage pairing.
