Cheesy Potato Burritos Recipe
Ingredients:
For the Cheesy Potatoes:
• 4 large russet potatoes, peeled and diced into small cubes
• 2 tablespoons olive oil
• 1 teaspoon garlic powder
• 1 teaspoon onion powder

Instructions:
1. Prepare the Cheesy Potatoes:
o In a large skillet, heat the olive oil over medium heat.
o Add the diced potatoes to the skillet and season with garlic powder, onion powder, paprika, salt, and pepper. Stir to coat the potatoes evenly with the seasonings.
o Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and tender.
o Sprinkle the shredded cheddar cheese over the cooked potatoes and stir until the cheese is melted and evenly distributed. Remove from heat.
2. Assemble the Burritos:
o Warm the flour tortillas in the microwave or on a skillet for a few seconds to make them pliable.
o Spoon some of the cheesy potatoes onto the center of each tortilla, leaving a border around the edges.
o Top the potatoes with cooked black beans, diced tomatoes, chopped fresh cilantro, diced red onion, and sliced jalapeños if desired.
3. Fold the Burritos:
o Fold the bottom edge of each tortilla over the filling, then fold in the sides, and roll tightly into a burrito shape, tucking in the filling as you go.
o Repeat with the remaining tortillas and filling.
4. Serve:
o Serve the Cheesy Potato Burritos immediately, whole or sliced in half, optionally with sour cream or Greek yogurt, salsa or hot sauce on the side.
