Woke up this morning after a long sleep with a ton of messages about our opening, store hours, etc. We just started training our staff on Tuesday and have been trying to dial in our ovens. Yesterday was our soft opening, a small event that was unannounced until later to help us have a truly soft, small opening to be able to get off the ground, training without insane pressure, and get a flow going. As one person suddenly expanding my skills to a team of 10-15, it's going to take us a little to get up and running! By the time I got home after the soft opening yesterday I had been awake for 31 hours to train 2 sets of teams and make sure it all ran smoothly.

But to answer some common questions as my inbox is blowing up:
1. We will NOT have a drink service these next week. Hoping to narrow down a coffee this week and start testing and then train soon. This also eases the needs on our FOH for what I expect will be a very very busy opening days.
2. We are working on a days/times schedule. We hired our staff back in early April and since then we have had some staff change their times/days of week vs what I had been planning around. P.S. this means we are hiring! We are looking for 2 bakers, weekends are a must! FT or PT, morning or night or overnight. And another farmers market assistant, Saturday mornings a must, that will also have opening to FOH shifts if desired.
3. We will be back at the farmers market! My hope is 7/11 but I'll keep you updated.
4. My goal first and foremost is to be able to bring you all what we've been doing for years into a setting where you can stop by multiple days a week and specials are more than just a day long. And once we have that set, we are looking at starting to expand our menu to offer more savory baked goods and pastries that we've been working on in the background. Bread is something I hope will come, but our lease requires us to be open 4 days a week and I need to make sure we have the ability to grow to 4 days with our current team and equipment first!
