Indian Shrimp Stir fry/curry

Supplies
1 pound of large cooked shrimp.
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 red pepper
1 onion
3 tomatoes
½ cup of whole milk yogurt
Indian spice mix of your choice.
Garlic powder used National bran Meat masala
Cooking olive light oil
A big cooking pan or better a wok
Cut the peppers one onion and one or two tomatoes into large pieces.
Put them in a bowl
Cur one onion and 2 tomatoes into fine pieces
Cooking
Cook all the large chunks of vegetables in the microwave for 3-5 min to remove the water and cook lightly.
Pour oil into the cooking pan.
Add the finely chopped onions and cook them till they turn golden brown
Add the finely chopped tomatoes (I look them in the microwave for 5 minutes to speed the process and remove most of the water.)
Add the spice mix and any other spices you want.
Put the stove on low heat and let the tomatoes, onions, and spices slowly cook. Add some water if the mixture gets thick or sticks to the pan. Add yogurt to make a thick paste. Add water as needed to get the consistency you like.
Now, drain all the water from the defrosted shrimps, and add those to the vegetable mix.
Stir them on low fire for 3-5 minutes.
Add cilantro to garnish
Serve in s large serving bowl.
