Recipe For 4 Servings

Ingredients: 
8-12 yellow potatoes small to medium sized
3 garlic cloves- minced 
1 teaspoon paprika
1 tbsp. Aleppo pepper
1/4 cup salt
1 teaspoon chili oil
4 tbsp olive oil 
Flaky sea salt
1 tbsp. chopped parsley (optional)
Chili flakes (optional)

Lime Aioli: 
2 tbsp mayonnaise
1 teaspoon lime zest
1 tbsp lime juice
1 tbsp fresh parsley (chopped)

Instructions:
1. Bring a pot of water to the boil, add 1/4 cup salt, potatoes and cook for 20-30 minutes (use a fork to make sure the potatoes are soft enough). Once soft, drain and let the potatoes cool down.

2. Preheat the oven to 400F.

3. In a bowl mix together garlic, chili oil, paprika, Aleppo pepper, olive oil and mix until combined.

4. Place the potatoes in a baking sheet. With the bottom of a cup or potato masher squish the potatoes gently. **The thinner the potatoes the crisper it will be.

5. Brush the potatoes with spicy oil mixture.

6. Place in the oven for 35-50 minutes (depending on how crispy you like it).

7. Add flaky salt, chilli flakes, parsley and serve. 

Lime Aioli:
In a small bowl mix together mayonnaise, lime juice, lime zest and parsley. 
Mix together until combined.
