The Roman Jewish cuisine has roots that date back to 1555 when Pope Paolo IV instituted a Jewish ghetto known as "il ghetto ebraico di Roma". This quarter is located in the heart of Rome in Sant'Angelo in Pescheria near the Tiber river. Having very little and restricted from leaving the quarters, the Roman jews began to create recipes from what was available. From here, genuine and simple recipes like the renowned "carciofi alla giudia" were born. To this day, these traditional recipes are enjoyed and have become a passion. These traditional recipes are passed down exclusively within the family from generation to generation. This is not your average Italian food. The Roman Jewish cuisine features a history and unique flavors that are unforgettable. From here the flavors began and from here is where Chef Pacifico was born.
