Tête de Moine is a semi-hard Swiss cheese with a nutty, fruity flavor, traditionally made from cow's milk in the Jura region. It's famous for being shaved into delicate rosettes using a special tool called a girolle, which scrapes the cheese into curls. The cheese is aged on spruce wood, has a reddish-brown rind, and is best served shaved to release its full aroma and flavor, often paired with dry white wine.
