Chicken Enchiladas … If I make the chicken in the crockpot then this only takes about an hour when I get home from work. Cheese shredding and jalapeño/onion cutting use up most of that time so if you prep ahead this is a great 30 minute weeknight meal.

Perfecting the crust edges once more…why do they transform from stunning when I make them to mediocre after baking?!? I vow to master beautiful pie crust edges this year.

The crust recipe is the one my Aunt Maggie made when we were growing up
so I know the finished result will be wonderful. I love the memories of pies from one end of the kitchen to the other while she and my mother visited and baked for hours.

2 cups flour5 cup organic Spectrum shortening5 cup unsalted European butter
(She used 1 cup butter flavored Crisco)
A dash of salt
1/3 cup of milk
2 tablespoons white vinegar

Mix, chill and roll.

You understand what a huge compliment you were given when the dessert was the only photo that made your spouses post, given the meal was one of his favorite. (Fried Catfish, Hush Puppies, Potato Salad, Slaw, and Iced Tea.)
