Baked Olives And Peppers

Ingredients
- 2 cups whole, mixed olives
- 1 cup mixed sweet and cherry peppers
- Β½ cup roasted red peppers
- ΒΌ cup dry white wine
- 1 Tbs. orange juice
- 2 Tbsp. olive oil
- 2-3 cloves garlic
- 2 sprigs fresh rosemary, taken off of the stem
- 1 Tbs. fresh parsley, roughly chopped
- 1 Tbs. fresh thyme, roughly chopped
- 2 Clementine's, zested and juiced

Preparation

Preheat the oven to 375F degrees.

In an oven safe dish, mix the olives and peppers together with the wine, orange juice, olive oil and garlic.

Bake for 7 minutes.

Add rosemary, parsley, thyme, Clementine juice and zest and red pepper flakes (if using).

Bake for 15-20 minutes until nicely roasted.

These olives and peppers are great served warm or cold by themselves, on crisp baguettes or even as a salad or sandwich topper.

Grilled Ham, Cheese And Roasted Red Pepper Panini

Ingredients
- 4 slices bread
- 4 slices ham
- 4 slices cheese
- 1/2 cup roasted red pepper strips, drained
- 1/2 cup fresh basil leaves or fresh baby spinach leaves
- 2 tablespoons butter

Preparation

Evenly disperse cheese, ham, the red pepper strips, and basil or baby spinach between the two sandwiches.

Spread the outside of sandwiches with the softened butter.

Grill sandwiches on a panini grill, in a saute pan or on a griddle until toasted and crisp.

Oatmeal Coconut Cookies

Ingredients
- 100 grams rolled oats
- 75 grams dried flaked coconut
- 120 grams all-purpose flour
- 100 grams caster sugar
- teaspoon salt
- 100 grams butter
- 25 grams Inverted sugar syrup (or corn syrup)
- 1 teaspoon baking soda
- 2 tablespoons boiling water

Preparation

Heat the oven to 150C/300F and prepare two baking trays covered with parchment. In a large bowl, stir together the oats, coconut, flour, sugar and salt.

Meanwhile, melt the butter and syrup together in a small pot over low heat.

Stir the baking soda into the boiling water, then stir this into the butter and syrup mixture. And pour all of it over the flour mixture.

Mix well, then shape the mixture into 32 balls and place onto the prepared baking sheets. Press down to flatten the cookie balls with your palm.

Bake for 12-15 minutes, switching the pan around if need to for even baking, until the cookies are golden brown.

Leave them on the baking trays for 5 minutes before removing them with a spatula to cool on a rack.

Italian Style Baked Chicken Thighs

Ingredients
- 8 skin on chicken thighs
- 1 large vine ripe tomato
- 1 small red onion
- 5 garlic cloves
- handful of Italian parsley
- Juice of 1 lemon
- salt
- black pepper
- olive oil
- grated Romano cheese

Preparation

Preheat the oven to 350F degrees.

Place the tomato, red onion, garlic, parsley, and lemon juice in a food processor and give a few good chops.

Place the chicken thighs in a baking pan and sprinkle the tops of the skin with salt and pepper and a drizzle of olive oil.

Top the thighs with the mixture from the food processor.

Bake for 45-50 minutes.

Grate Romano cheese over the thighs when they are finished cooking.
