Plantain Chocolate Chunk Coffee Cake / Miso Chocolate Caramel / 72% Namelaka / Vanilla Bean Cream / Cinnamon Sand / Plantain Butter / Candied Plantain / Cocoa White Chocolate Disc

For this opportunity, I took the challenge to keep to my philosophy of keeping the savoury and pastry sides bridged 🤝. My desserts are never sugar forward, and this is no exception 🍽️.

Utilizing plantains 🍌, I presented them naturally in the coffee cake itself for added texture 🍰, candied by way of bruleeing them 🔥, and as a plantain butter spread akin of apple butter 🧈🍏.

With ’s rich history 🍫, I applied their decadent 72% as an inclusion in the coffee cake 🍫, and the driving force of the whipped namelaka 🥄. In addition to that, their white coating chips and earthy cocoa powder leant themselves well to making the chocolate decoration 🍪—my chocolate “Pringle”, if you will 😄.

This all could not be tied together completely without the canvas that is ’s plate-ware 🍽️. The design I chose felt invocative of Latin America 🌎—where we can find some of the best plantains and chocolate around! Aside from that, the floral design aided in adding colour and flare 🌺 without me having to resort to micro-greens or another natural garnish 🌿.

Breakfast, lunch, or dinner ☕🍴—coffee cake can be present, and this dish will be there waiting for you and your next cup of coffee ☕.

Texas Peach Upside Down Cake / Mayo Miso Caramel / Browned Mayo Peach Compote / Spiced Graham Sand / Vanilla “Kewl-Whip”

Being from Georgia 🍑, there is nothing more synonymous than peaches and southern mayonnaise 🥄.

I wanted to honour my roots 🌱, and highlight my current state of Texas 🤠 by creating this comforting dish from my heart ❤️ to your mouth 👄. Subbing all butter 🧈 in these recipes for the silky mayo 🍶, and adding my own flair of savoury nuance 🧂 with miso 🍜, black salt 🖤, and MSG 💥.

The Texas peaches 🍑 are perfectly in season 🌞, and 🧴 is ALWAYS in season, so it was a no brainer 🧠✨ to marry the two 💍.

This may not look like grandma’s upside down cake 👵🎂, but it will make your soul smile 😋 just like hers did. The perfect bite to tuck away Summer 🌞🍂 before Autumn fully awakens 🍁🍃.
