Our Croissant Loaves have a fresh new look!

I’ve been playing around with the croix loaf lately as we were having some inconsistencies with the beloved original—weak crumb structure and some big air pockets. Neither of those is ideal especially if you’re making a sandwich or toast…

So, we decided to start braiding the dough instead. We discovered this technique creates a much stronger internal structure, eliminating weak spots and giving you a more uniform, pillowy interior that will actually hold your jam!!

I’m happy with the change and we are definitely sticking to this technique from now on. What do you think about this glow up?
