Ingredients:
1 lb Atkins Ranch Lamb Leg Steak (see seasoning below)
6 slices ciabatta bread, ½ to ¾ inch thickness
1/2 cup ricotta cheese
2 cups grape or cherry tomatoes, placed on skewers
Homemade creamy mint sauce (see below)
Garnish: fresh chopped basil, lemon zest

Lamb Seasoning:
1 tbsp olive oil
1 tsp salt
1 tsp smoked paprika
1/2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp lemon zest

Creamy Mint Sauce Ingredients:
1/3 cup full-fat Greek yogurt
1 tbsp olive oil
1 tbsp lemon juice, freshly squeezed
1 lightly packed tbsp fresh mint leaves, finely chopped (measured full leaf)
1 tsp honey
1 clove garlic, freshly grated
Pinch of salt

Directions:
1. Prepare the creamy mint sauce by whisking Greek yogurt, olive oil, lemon juice, mint, honey, garlic and salt until smooth, place in refrigerator covered until ready to use
2. Prepare Atkins Ranch Lamb by evenly brushing olive oil on both sides
3. Combine lamb seasoning in a small bowl and evenly coat the lamb with spice mixture on both sides
4. Let seasoned lamb rest for 10-15 minutes
5. Preheat grill to medium/high heat
6. Grill skewered tomatoes directly on grates until lightly charred on each side (~3-5 minutes)
7. Remove tomatoes and grill bread on each side until golden with char marks (1-2 minutes per side)
8. Grill lamb until desired doneness, remove from heat and rest for 5 minutes before thinly slicing against the grain
9. Assemble each bruschetta by spreading a thin layer of ricotta cheese on each grilled ciabatta slice followed by the sliced lamb and grilled tomatoes
10. Generously add creamy mint sauce over top and finish with fresh chopped basil and lemon zest
11. Serve immediately and ENJOY!
