Easy Creme Brulee Recipe
🍮 Servings: 6 (4 oz ramekins)
⏱️ Prep Time: 10 minutes
⏱️ Cook Time: 30–35 minutes
âś… Dessert | Classic | Silky Custard
Ingredients
2 cups (480 ml) heavy whipping cream
(or full-fat coconut milk/cream for dairy-free)
5 large egg yolks
1/2 cup (100 g) granulated sugar, plus extra for topping
1/4 tsp salt
1 tsp vanilla extract (or 1 vanilla bean, split and de-seeded, or vanilla paste)
Instructions
Warm the Cream:
Heat the heavy cream in a saucepan over medium heat until steaming. Remove from heat and stir in the vanilla.
Mix Egg Yolks:
In a separate bowl, whisk together egg yolks, sugar, and salt until smooth. Slowly pour the hot cream into the yolks while whisking constantly to temper the eggs.
Strain the Custard (Optional):
Pour the mixture through a fine-mesh sieve into a large measuring cup or bowl for the silkiest custard.
Fill Ramekins:
Divide the custard evenly among six 4-oz ramekins. Place them in a casserole or baking dish.
Bake in a Water Bath:
Add boiling water to the casserole dish until it reaches halfway up the sides of the ramekins. Bake at 325˚F (160˚C) for 30–35 minutes, until centers are nearly set with a slight wobble.
Cool and Chill:
Remove ramekins from water bath, cool on a wire rack, then cover and refrigerate at least 2 hours to set.
Caramelize the Sugar:
Just before serving, sprinkle about 1–2 tsp sugar evenly on top of each custard. Use a kitchen torch in circular motions until the sugar melts and turns deep amber.
No torch? Place under a broiler for 2–3 minutes, watching carefully!
Pro Tips
A small handheld torch works perfectly; even a garage flame torch can do the trick.
Don’t overbake—slightly wobbly centers yield the creamiest custard.
Egg whites? Save them for pavlova, meringues, or an egg white omelette.
