🍽️JUICY ROASTED CHICKEN 🍗 🔥
📝 INGREDIENTS:
1 whole chicken (3–4 lbs), giblets removed
4 garlic cloves (minced)
1/2 cup butter
1 onion, halved (optional)
1 stalk celery, leaves removed (optional)
3 potatoes (halved or whole if small)
2 carrots (sliced)
1 1/4 tsps olive oil
1 tsp salt (or to taste)
1/2 tsp black pepper (or to taste)
1/2 tsp onion powder (or to taste)
Fresh herbs (rosemary or thyme)
👨🍳 INSTRUCTIONS:
🥣 STEP 1: PREP
Pat the chicken dry (this is key for crispy skin)
Place it in a baking tray with the vegetables.
Preheat oven to 350°F
🧄 STEP 2: SEASON
Mix oil, onion powder, salt, pepper, and paprika.
Season the chicken generously inside and out.
Mix 3T butter and minced garlic and rub inside the cavity of chicken and under the skin. Arrange dollops of remaining butter on the outside if chicken.
(Optional) Cut celery into 3-4 pcs and place in the chicken cavity with the halved onions.
🔥 STEP 3: ROAST
Bake uncovered in the preheated oven for 60–75 minutes or until no linger pink at the bone. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165°F
👉 Baste with drippings halfway for extra flavor.
✨ STEP 4: FINISH
Remove from the oven and baste with drippings then cover with aluminum foil and allow to rest for about 15-30 minutes before cutting to allow the meat to absorb the juice so it’ll be juicier🤤 Serve with rice or mashed potatoes or any side dish you like.
