I wish I knew stencils add a nice touch.

Tip: Use a stencil on a fully dried cookie, especially if you’re heavy handed like me 😂

I wish I knew royal icing cookies can sweat!

Tip: Purchase a dehumidifier & indoor thermometer to check your levels. My sweet spot is 45-50% humidity.

I wish I knew what gave royal icing a soft bite and a perfect shine.

Tip: Use 1-2 tablespoons per 2lb bag of powdered sugar!

I wish I knew it’s better to put a second layer on crusted icing verse fully dried icing!

Tip: Don’t panic. Most mistakes can be fixed before royal icing dries!

Tip: Use a thicker flood to have a great puff and no craters!
